Mini Refurb progress report.-
Now that the Main Restaurant, the Bar & Saddlery Room are complete, we must divert our refurb energies to outside, we are relocating a bowling hut and before the bowling season starts we must get the grounds to look good. After that we're back inside for our "Reception Make Over".. This is to include the area to display Afternoon Tea (we think will be on a Wednesday) the market stall (this maybe on Thursdays) and the gift shop area which will be open every day of the week.
So……… we have declared our intentions, can we make it happen? We intend to begin work in March and it should all be done by the end of May. Knowing the other jobs we (well Rory) has to tackle, I hope this time frame is close. |

Quiz Night Our Family Quiz Night
Unfortunately we only had a few teams as our date clashed with a couple of other events, none the less there was a lot of "Ooh-ing and an Ahh-ing" going on, and at times…… a little unruly behaviour.

Where do I begin
I know I need to vent again. RATES!!!!, thought it was all sorted and was happy with the outcome, I am sure when I brief you on this you won't believe me, ........as gracefully as I can, here I go. We got a substantial reduction in our rates, but it appears it was too good as we have incurred a transitional surcharge in favour of the council, they are now requesting £7070 for say the "privilege". The thing is, had our rates been set at just a fraction higher, we would not have triggered this surcharge. Much industry and legal advice is needed.... and is being sought. Who knows?????
The next 2 stories also relate personally but more in a good way.
Recharged Batteries
As we are not intending to go away properly until after Easter, we nicked off to the Canaries for a midweek break to recharge the batteries. Travelled with Ryanair and stayed with my parents. Potentially it could have been a little…mmm….difficult, but it was all excellent and partially free. Never having been to their apartment before, I'd say they had a pretty perfect pitch, sea view etc. I told them they should rent it, but my mother's having none of it. Maybe she'll change her mind. …Anyway the break will go a long way to keeping our energy levels at a max, we have a lot to do.
Our House – In the States
This one's a little more difficult, now that I have had my time out" we are back with a vengeance, this realistically means we want to be here having lots of fun driving forward the refurb changes and our new business direction. The problem is I don't want to sell our house, but at the same time it needs to be lived in. It can't be left standing for too many months or it will quickly deteriorate so if any one genuinely wants to "house sit" for a month or so out in Georgia, please let us know. You would have to be able to drive, as there is isn't a lot out there to do. If you would like to see the house Rory has added a few pictures of it on the Nags Head web site (click here) or look on our web site later in the section 'About Us'.

Karl & Katie's Baby is not here Yet
Karl and his wife Katie are due their first baby any time now, with the due date being February 24th it really is getting close. Everyone is very excited, I am sure by next month's news letter we can officially congratulate them and announce the babies name.

110% Could not have gone any better,
This year Richard had requested we do pre orders, something we have not done before, this was definitely the right thing to do and played a big part in the overall success of the day.
New Years Eve
As hoped, our New Years Eve was very much a community event; future years may see us do something similar. We received an email which read "A great big thank to you for last night it was great – what a way to see in 2012 surrounded by lots of lovely friends in our lovely local"

Mini Refurb progress report.-
We have opened up the wall at the end of the bar. We have removed the fixed seating from in front of the bar. The bar itself has been stripped down and re-surfaced. The back bar has had a colour change to the paneling and extra lighting added, all the walls and ceilings have been repainted a lighter colour, new curtains and refurbished bar stools and the sofa in full view. New glass wash and sink relocation. So, although there are some finishing touches to be done, we can remain open while we complete them. The 2 days we closed were so productive, they were long days, Rory, Karl, Richard and Alan once again pulled out all the stops. The result is uplifting, and proves just what can be achieved. |

| The Bar Refurb:- contemplation, complications, responsibility and result, no one wants to get it wrong, I don't think we did.
It is hoped that the changes we are making will kick start 2012, our
pub, the food we serve, the welcome, it's all second to none. The
days are nice and busy, but at times I am a little disheartened when
I cannot pin point the ingredient needed to encourage more evening
trade..... Keep trying hey.

For now, you can pick up our Function Menus In-House, unfortunately they won't be on the net for a few weeks. Our
Farriers Restaurant, which caters for around 60 persons is what makes us the ideal pub restaurant venue. Add to that our
excellent reputation for food quality, service, comfort and overall ambiance then, the Nags Head is worthy of consideration.
"VOUCHER" Cut out and keep

Simple;- photo copy it, re type it, give it away or hand loads out. The top and bottom of it is; book a group booking for 15 persons or more on any evening, between January 2012 and November 2012 and this slip valued at £25.00 can be used as a voucher towards payment. It doesn't matter when you book, but there can only be one voucher per function group of 15 or more. That's all
the rules there are, so don't throw this section away, keep it till November 2012. (PS excludes Early Diners Menu options)

Issue No 13 |
Wow, not a spare minute. It is great. I am having a blast with all
our customers. At lunchtime we have a reputation for attracting a
more mature rowdy crowd but we have loads of fun. I am pleased
we have this mutual understanding. Last week I was particularly
touched when an elderly regular held my hand and said, "Debbie, let me tell you, you make a lot of old people very happy". For once, I was speechless.
Next, so many cute and quirky things. We made the reindeer and sledge and a few more little dudes to stand with them, some people must think I'm daft. "Cute" to me creates a smile, this then creates an emotion that has no malice, no jealousy, no fear, and presents no threat of superiority. In my book cute and novel stay.
Then there's the refurb, an ongoing roller coaster ride of, contemplation, complication, responsibility and result, no one
wants to get it wrong, but all this variety is where the fun is.
And on top of that, a new business venture for Darren my son. I have a little part to play on the creative, novel and cute side, but
the rest is up to him. Rory has a bigger part to play by setting up designs and setting up an internet sales web site. It is all very early days. I'd like to tell you more, but not for a month or two.
So that's it for now. By the time the next Newsletter comes out, Xmas and New Year will have gone by, so from Rory, Myself and everyone here, we sincerely wish you a very Merry Xmas. |

Karl's wife Katie has this artistic streak. So Karl, Katie and Demi dressed
the pub lounge with spiders, cobwebs, skeletons and pumpkins, and to
compliment the theme, our Chefs Creative Journey Menu features items

Issue No 12 |
Well we have had our rate review. It has to be said that every little helps, and
although there is a reasonable reduction, it is not as much as we hoped for. It
took 338 days to disclose a new rateable value of £47,500 but, if we were to
appeal we had just 7 days in which to do so. Something somewhere isn't right.
On a brighter note, I think the Farriers looks great, it is so much lighter, it blends
in well, yet it has a more modern feel. With a lot of the work, being done by
ourselves, there is a much bigger feeling of achievement. The upholstery course
Rory went on certainly paid for itself, as I am sure you will agree.
Again on another upbeat note, our next refurb plan has been decided, hopefully
work will now commence on the back bar, (it was between the bar or reception).
Go Go Rory! – What would we all do without him?

(A bit of food and music will also be provided)

New Beer Supplier
Flowers Bitter has been our House Bitter for a very long time. Although it is possible for our new supplier to get Flowers IPA, the cost is likely to be significantly more. We will probably change over by the end of the month. If you have any strong views on this please let us know. |

| Debbie's Column Issue No 11
Back from our hols. While we were away we completed a lot of the restoration and are on target to have it rentable after our next visit. Because of Karl's baby due in February I don't think we will make it back to the States till after Easter. We have decided though to look into the option of renting it for holiday lets rather than finding a long term renter. Give you more on that again.
I am really looking forward to the next 6 months, many of the ideas we have come up with, should now be put into operation.
We have a hearing date for our rates which is set for Monday 21st November; it was in the March newsletter when I first mentioned that we put in an appeal, 9 months ago........But I will remain calm.....for now.........

CLOSED
FOR INTERNAL PAINTING
As part of the Nags Head facelift,
Our Bar is having a new coat paint and varnish.
We have decided it best to close while this is being done. The dates will be as first thought but only closing after lunchtime service on Tuesday 2nd and reopening for Friday Night 4th January 2012. All other areas to be painted will be done either side of this date, but will NOT require us to stop service.

Amy – Is settling in nicely, she is feeling far more relaxed and comfortable. She will start taking more food orders now, so as most of you are far more qualified than she, I'm sure you will help her along.

OCTOBER PLANS
Carpet fitter is booked for the 24th October. A sample of our selected Carpet is displayed in Reception. (A Bold but exciting choice –) along with our upholstery chosen for the chairs. Rory's is attending a 2 day upholstery course the first week in October. Then he will attempt to change over the chairs upholstery prior to the new carpet being laid.
He is a glutton for punishment.

Scaffolding came Down
While we were away on holiday. Alan finished off the lower half and so now it all looks so much better. Once again we feel that the building, externally at least is back up to standard.

Our new wine list is out now and can be viewed In-house or on the Web. In addition to our standard wines by the glass, Karl, is offering weekly a different red and white by the glass. The wine offered, will range from new, unusual, and on some occasions a very fine wine. The emphasise is to have them favourably priced so as to make it worth trying. |

Debbie's Column Issue No 10
OK - Spirits are quite high now, (my spirit that is, not the cost of whisky e.g.) We are away a little bit in September, but already I wanna get back. We have owned a house in the States for the last 4 years, but now we have decided that this trip and one more will see out some restoration work we are doing over there, after that we could maybe rent it out for a few years.
So much focus on pushing forward with a multitude of projects here, I hope my enthusiasm and energy is as infectious as usual. Ideas for an Outdoor Christmas display, is one of the many creative ideas on plan.
I enjoy harmless fun; simple things that make you smile. I'm not complicated as some may think. I believe in always doing the very best you can, work hard, play hard, and treat everyone with respect. These simple rules I believe will always stand me in good stead, whatever the future holds.

AFTERNOON TEA
Trial run, it was a freebie for some lucky customers
who happened to be in on the day. The cakes were
great. Well done Becky.
This trial run will now help us work on how best to
display and serve our Afternoon Tea in the future.

NEW STAFF
Amy - a new young lady for Front of House bar and
floor work has had an initial "Nags Head
Induction", she appears to have enjoyed herself,
and will therefore make a few appearances in the
coming months. We all welcome her to the team. |
SEPTEMBER PLANS
Not much planned for September, we have quite a bit on with bowling parties and, some holidays will be taken by full timers before Vicky, Hannah and Sophie go back to University.

Wall Repair – Scaffolding comes Down
The job to repair, re-plaster and re-paint the 2 gable ends is complete; the scaffolding supposedly comes down on Monday
5th September. We will look forward to seeing the result of everyone's hard work. (Actually the lower part still needs
painting but we need the scaffolding down first).

XMAS & NEW YEAR
Menus are ready for Pre Xmas, and Xmas Day. They can be viewed
and printed off the web as of Friday 5th August.
Boxing Day will be as usual offering a self serve Festive Hot Buffet
and a slightly reduced A La Carte Menu & New Years Day falls on a
Sunday so this will be the normal Sunday Lunch.
As for New Years Eve, this is still up in the air. I think this year we
will serve food up until early evening, and then we have talked about closing. Every year the same staff work, as this is our 10th year, maybe
just this year, they and us can take a 'sabbatical'

Debbie's Column Issue No 9
For those who know me, I feel at my best when loads of things are going on, but
to be more specific, if I can have an additional project, something I can get my
teeth into as well, then there's just no stopping the adrenalin.
Despite my enthusiasm and energy, I do have to be reined in a little by Rory,
and although his support is unquestionable he usually ends up with all the
technical stuff and also usually ends up with the hardest tasks. I love the
creativity, planning and the organising and fortunately Rory loves the doing.............................. Good job really.
So a refurb is on !!!! A small one anyway, we will start with a new carpet in the
Farriers -in late October, this will come with newly upholstered chairs, and
associated bits and bobs. The carpet is sorted, the upholstery fabric not as yet,
but whatever we chose, both jobs have to be done simultaneously to create the
new look.
I am also to draw up a rough schedule of other jobs which will be tackled over
the next 12 months. I can say it is hoped we will eventually give everything a
new lease of life and our aim is to be able to offer something for everyone, not
only in the food that we do but the services we provide. Mmmmm
I was asked last week, 'whatever happened to the team of 5', they thought it
appeared not to have worked'. I then chatted for a good while explaining just
how much it had worked. That from the outset it was a way of buying time, and
in whatever form it ended up there was a win win for us and a fair opportunity for
the original 5. As it is, it could not be better, and if you ask me, I'll explain. Long
term decisions have been made, and we can now focus our energies with
clarity.
So this section can and has been a little deep at times, trying to explain things to
you, has helped me work things out. So with us now declaring our intention to
invest in a refurbishment we trust our actions will speak volumes.

AUGUST / SEPTEMBER PLANS
One guest said he drove into the car park, prepared as usual to
navigate around the potholes, he was pleased they were no longer
there. He then commented that he would be checking that all our
planned works are carried out on time. Ooops. Pressure's on.

New Wine List:-- As part of our "Something for Everyone", we
are working on a new wine list. We want to let people have the chance to
experience many different wines.... In addition to our standard wines by the
glass, Karl, each week will offer one different red and white by the glass.
This wine will be priced fair and reasonable. The wines offered, will
range from new, unusual, and on some occasions could be a very fine
wine. We will list the "Wines of the Week" not only in-house, but alongside
our weekly changing "Chefs Journey Menu" as posted each week on our
web site. Our New List should start later this month. |

We have a couple of outside bars coming up in August. We
have done a lot of outside bars before, but this will be a first
for us at the Nags. An interesting avenue to be going down.

HERB GARDEN
Well Richard is feeding them, and using them,
But NOT weeding them.
The other evening a customer asked for Hot water with fresh
mint, it was nice to see Richard go to his herb garden, cut off a
mint sprig and provide the gentleman with his request
NB. After Richard read this section of pre print copy, he has now weeded. And also planted more herbs in his extra space.
Now, he wants a wooden sign and etched labels…….!!!! |

100 YEAR CENTENARY
A Photographer is due on the 12th July after Karl gets back from
his honeymoon, let's hope it doesn't rain. So look out for us
thereafter in the Nantwich Chronicle Newspaper.

previously played on our Green. We wish to issue a celebration certificate of attendance, with one lucky bowling party then
receiving a £100 voucher towards their next Bowling Group Visit.

Debbie's Column Issue No 8
It takes a few days to settle in after you come back from your hols, but we really are very lucky to be able to return to such a beautiful place.
12 months
It has been just over 12 months since Rory and I decided to take a step back and allow Karl and Richard to take on the daily responsibilities of the job. I have learnt so much, and now view things so differently, but together we have decided our path remains unchanged. Haughton is the place for us, and for as long as we have the Nags Head, over time, it will have areas re styled, including areas which will be cute, quirky, full of games and full of innocent fun.
Hopefully Rory will also find a little time to pursue his own hobby of making things from wood, a pastime which when he gets to do it, he finds relaxing, uncomplicated and very satisfying.
We have amended the history page in our menu and on the web site (as we do from time to time). It reads similar to the above, but if you want to read more, the changes occur from what starts off as "2008 and 2009" |

Mixed Up Month
We are well into June and you haven't until now
received your Newsletter. This mixed up month,
which is all out of sync, may next year be omitted and
officially known as a Nags Newsletter Holiday.
Once again, a great job was done by everyone while
we were away. Karl and Richard again proved to us,
to you and to themselves, they are well deserving of
their roles as Manager and Head Chef

SUCCESFUL CELEBRATIONS
Since our last newsletter, there have been a couple of
different occasions which have had excellent reviews.
Wedding
On Friday 27th May, the Nags Head was the venue for a
wedding reception, (holding both the day and night
celebrations). The wedding was attended by a lot of guests
who live locally. Our contribution:- food, service and
venue ambiance, all helped make their day just perfect.
Birthday Party
Although this is nothing unusual for us, the number we
catered for was. Our Farriers Restaurant usually holds up to
55, but on this occasion there were 63 people. Karl, pre
discussed a room plan and was able to accommodate all the
guests comfortably. A 3 course Sunday Lunch was
provided and the reports upon departure were excellent.
Good food, (beef in particular) and lovely pleasant staff. A lot of local farmers attended.
These kind of compliments help to maintain and encourage
team spirit. Everyone works so very hard and comments
like those above are very much appreciated.

RICHARDS HERB GARDEN
Richard, Head Chef requested an area at the front of the Farriers Restaurant for his very own Herb Garden. - We needed to
relocate some shrubs, with this now done, the herbs are in.
We were not too sure if he would nurture them, feed them, talk to them and generally ensure their healthy well being:- well it
appears he does. As such we have all agreed to increase his
garden space, so more fresh herbs will be on hand.

We have added to our web site and on our display table at the Nags a bespoke walking map, with routes that specifically set off from the Nags. There are 5 different routes ranging between 1 to 4 miles.

Debbie's Column
Issue No 7
I have a LOT more space this month, but very little to say. Rory and I have been away for our pre summer season break. We had a fantastic time as usual, and have once again recharged the batteries.
In the Garden
Alan, has been working the garden while we have been away. Things sure have shot up, and the flower beds, look great. We intend to spruce up the med patio, and organize the hanging baskets next.
Ongoing Uplift
So much to be done as always. I don't think anyone ever finishes getting done the jobs they have planned.
Time
And one of the main reasons for jobs not getting done is "Never enough time in a day". Whoever you are, retired or otherwise, whatever you have to do, there is just not enough time. You can only fit so much into one day, so whether it is because you want to do something, have to do something, or want to do something but can't, we must all accept the constraints of time, and our individual limitations. Enjoy it though, however long it takes.
Unfortunately, I am someone who has to always be doing something, I always have a list. If I'm not busy, I'm probably not too happy. Wouldn't do for us all to be the same. I suppose one day I will slow down, but for now, I am in general, a happy little soul.

The sunshine continues. April has been glorious. People have taken advantage of the good weather, and by and large, - a feel good factor is in the air. Long may it last.

Wedding Celebrations
Friday 29TH April 2011
What a perfect day all-round, the wedding in our opinion was faultless, and it was celebrated at the Nags with a great party atmosphere, a memorable snippet of community village life. A team of dedicated locals arranged the whole thing, the Nags merely providing the venue. A 77inch screen was hired which provided perfect viewing. There was throughout the day:- nibbles, coffee, lunch, cake, dessert and a champagne toast, which united us all in our wishes of congratulation. (See web for pictures) The day continued to be lively, families could enjoy the space outside as the weather remained dry.
A Perfect Day.
OUTSIDE GAMES
Over this past month, Large wooden games out in the garden were well received, they were being played as a test run for the "Kate & Will Wedding" community event. Unfortunately, after the event some playing pieces have been misplaced, (plastic balls, bean bags, large and small rubber rings). We will eventually find them, but if anyone sees them in a tree top for example please let us know.

ROAD SIGNS Once upon a time we tried to get an official brown road sign, at the time we were denied & we didn't pursue it, funnily enough this past month, 3 people have put that suggestion forward. We appreciate your ideas and may well look into it again.

Accordingly to an article, in a 1911 edition of the Crewe Chronicle, our bowling green was newly laid and it said; "it will be available for play during the summer" Karl will be contacting Crewe Chronicle, it is hoped they will run a follow up to that story 100 years on. Thanks to the gentleman who brought this article to our attention.
NIGHTS NOT AS BUSY? DONT WORRY
In response to our question, in last month's newsletter we have only had confirmation that what we do is great, our food is excellent, we are consistent and reliable, an institution as one person described us. The feeling is:- that with the development of many establishments the circuit has got a little bigger, making the customer base at the moment a little more spread. They also say, people have to try these newly refurbished, or under new management places (and we agree), but in the end people come back to the Nags. And do you know that 3P Thursdays are really growing in popularity; a full restaurant this week, it does take time for the word to get around. Simple but effective.
Debbie's Column Issue No 6
OK,I have a bit more space again this month, but whatever there is to pass comment on, which may be considered as me having a whinge has definitely taken a back seat while this weather is being so good. I know the sun and heat doesn't suit everyone but none the less, for most of us it makes us smile so much more.
In the Garden
OK, we are not gardeners, but this month I have been doing a spot of weeding, (due to Alan still painting). To show my ignorance; example weeds were pulled and laid out for me to use as reference. I recon a descent job was done, but by heck they grow back fast. Alan will resume the job for a while, but if ever you see Rory or myself around, and you have any gardening advice, we will take it.
Refurb Needed
We know and you all know an internal refurb wouldn't go a miss, it would create a new talking point, and create a refreshed interest. It is vitally important not to lose character, but the other night I watched Grand Designs, they were constructing a solid oak structure, but to add a little contemporary feel, they placed one of the arches on a brushed steel foot, with brushed steel pegs, in my opinion, it gently brought the two worlds together and complimented each other with class. (we won't be doing that)
For now, as the toilets are in need of new taps etc, this maybe where the brushed steel goes. ……We are still wanting to concentrate on outside however:- covered pagodas is one job on the agenda. Some things have to wait, but, In general we feel the job is moving along nicely, and quite just how we want it to be.

Sunshine in March
How lucky we have been this month with the sunshine and
blue skies. People have been sitting out in the garden and on
the patio, with the flowers budding and the birds singing, for
us and many more,it will be pure bliss.

Karl (manager of the Nags Head) wishes to thank everyone for their congratulation messages. A great day, and night was had by all.

RICHARDS RECIPE OF THE MONTH
Guinea Fowl with a Sweet and Sour Gravy
Ingredients
2 guinea fowl (about 1kg each)
6 fresh rosemary sprigs
2 lemons, halved
4 garlic cloves |
For the Sweet-and-Sour Gravy
50g butter, at room temperature
1 tbsp olive oil
500g shallots, halved
Leaves of 1 sprig fresh rosemary, finely chopped
75ml balsamic vinegar
600ml fresh chicken stock, hot
1 tbsp plain flour |
Method
1). Preheat the oven to 190°C/fan170°C/gas 5. Wash the guinea fowl and dry thoroughly. Put a rosemary sprig and a clove of garlic inside each breast(make a small cavity with a sharp knife or place under the skin) seal the breast by pan frying, this will take about one minute or until each side is goldern brown. Then remove from the pan and place in a roasting tin and squeeze a half a lemon over the breast and cover with tin foil and roast for about 20 minutes
2). (To check if they are ready, insert a skewer into the thickest part of the breast – the juices should run clear.) Transfer to a platter, cover loosely with foil and leave to rest.
3). Meanwhile, make the gravy. Heat half the butter and the olive oil in a medium saucepan over a low heat. Add the shallots. Cover and cook, stirring occasionally, for 5 minutes or until lightly golden. Stir in the rosemary and cook briefly, then add the vinegar – stand back, as it may splutter. Simmer vigorously until reduced and syrupy, then add the stock and simmer for a further 10 minutes or until reduced slightly. Mash together the remaining butter and the flour to make a beurre manié (thickening paste). Gradually whisk this into the sauce and simmer until thickened slightly. Season and keep warm.
4). If you have let the breast cool re warm thoroughly serve with the sweet and sour sauce and your choice of potatoes and veg
PS – Our recipe for what we put in our Mashed Carrots on Sundays is one that we will never disclose, and if you are ever told something, it probably wouldn't be the truth. !!! –
Sorry, you'll just have to continue to visit Sundays, to get your carrot fix.
GOOD JOB REBECCA Our new assistant chef Rebecca, the youngest of all applicants, who was looking for her 1st full time job after 3 years training, is fitting in very well. She is very thorough in her approach to learning our menu, and is coping very well with all associated demands of her job; overall we believe we made the right choice. |

Our local community have organised a street type party to
be held here at the Nags Head to celebrate the wedding of
William & Kate.
Normal food service will not start until 7pm.

Re-rendering and painting the outside is almost finished -
at the front, but the sides come next!!. As for the outdoor
furniture, we are a little behind schedule on that annual
maintenance programme. Will we make up ground and be
ready for Easter? – No Problem.
***** "3P THURSDAYS" –
PIES, PEAS & POTATOES – and "TUESDAYS CHOICE"
Both menus will continue to run, It has surprised us
though, how few have taken advantage of either one.
In general our day times continue to be very busy, but the
evenings are not as they used to be, trouble is we cannot work
out why. It can't be the food, can it? -It is better than it has
ever been,- when customers leave, the number of enthusiastic genuine compliments we get is brilliant.
So please, put some thought into it for us, we know we will be
busy in the gardens in the summer, and we know we want to introduce afternoon tea one day a week; WE ARE TALKING JUST NIGHTS.
Is it the portion sizes, the music, the service, the ambiance, is
it the hard to read menu which is no longer hard to read.
Introducing the chefs creative journey menu which changes
weekly creates variety – so WHY? –and please be brutal with
your answer, this is a genuine question!
NB - Having said what I said we were really quite busy

Issue No 5
We have had many people tell us our newsletters are interesting and
well written, I have to admit it does take time to carefully word any entry,
but it always proof read by Karl, I just write, he is editor and chief.
Last month I highlighted the cost of our rates, this did create a
talking point, and what became apparent was that other industries
are not rated necessarily on turnover. This industry has seen many
changes in recent years, I hope before long, the powers that be realise
that a rateable system, similar to other businesses would help
encourage successful independent traders like ourselves to maintain
the long term incentive. Richards's recipe has taken up my space,
good job I didn't have much to chat about, will catch you all next time.

Spring is around the Corner
For us, February has not been too bad a month, and with the
signs of spring beginning to show, we all hope a feel good
factor will help keep the momentum going.
So Who Has The Job – REBBECA does!
The last newsletter highlighted our search for an additional chef.
After careful consideration, it has been decided that the youngest applicant will be taken on. Looking for her 1st full time job after
training for 3 years, she is keen to gain more practical experience. Rebecca begins her full time job with us as of Tuesday 1st March.
We have an extensive regular menu, and feel that to help maintain
our high level of consistency, Rebecca will learn from us – our way. From product purchase to plate, Rebecca will be influenced
throughout, and our good practises will stand her in good stead in
years to come. Her individuality, in time will be expressed through
our 'Chefs Journey Menu Specials', and she has indicated a real
interest in our Homemade Desserts. We trust we have chosen
well and all look forward to a long, happy and
successful working relationship.

Winter Warmer Special
This menu is now finished; – all good things must
come to an end. It is hoped that a similar menu will
be offered again next year.

Having known Karl for the last 9 years, (manager of the Nags
since 2010) we have seen him mature from a typical lad, to:-"Husband to be". He is without doubt a really nice guy,
and knowing Katie for around 8 years also, they are, as it
should be, good for each other, they make a great couple.
Best wishes are sincerely sent.

Aprils Preparations' means March Madness
Rory did the Woodwork, Mathew Horton fixed up the rendering and
Alan's painting the front, it all looks much, much better. We had
Emertons' replace ridge tiles on the main building also. Alan will
now continue to work his way around the whole building, and we will
help maintain the gardens in general. This month will also see the
bowling green have moss killer applied, the pathways will be power
hosed, the outdoor furniture will reappear re-stained or re-painted,
and new garden games will hopefully transpire. April this year is
full of occasions, we have Mothers Day on April 3rd. Good Friday
is on the 22nd and the Royal Wedding which combines a
bank holiday is the end of the month. Lots to get ready for.

Time once again to "Say it as I see it".
Whether we are selling a product, an idea or ourselves, most of us do it, and with changing priorities, different techniques emerge.
Discounted something is good, but not quite so for all retailers. We consider ourselves to be priced fairly, we are not the cheapest, nor are we the dearest, but overall we offer value for money. So the menu above, can be viewed 2 ways, it offers you a discount, and us a way to advertise through your word of mouth recommendation.
But here is my dilemma, as a very successful independent freehouse, we have become victims of our own success, our current rateable value stands at £69,000, (payable in excess of £32,000). This large sum paid to the council, is our reward for doing well. So my views have changed over the last 18 months, I am now of the opinion that less is more. My priority to you the customer is without question, -as such we should maintain a comfortable level of trade whereby high standards and quality of product is met.
A review of our rates is underway, however all this takes months to sort out. When we know more, you'll know more. And what grieves me more is our £32,000 doesn't get us a repair to the tar around the damaged road side land drain grid. |

Happy February to all.
For many in this trade January and February can be quieter months. In preparation for the busier times, this period helps everyone get a holiday or take time off.
And busier times are coming quickly.
Our decision to promote larger functions, and private party facilities have had an encouraging start. In February alone we have taken at least 6 bookings where the numbers exceed 20 persons, and many more which are between 10 and 20 persons.
This is a positive result for the team, and with bookings for our bowling green season also coming in, the decision to find another chef is underway.
WHO HAS THE JOB
There are five chefs currently in contention, they are all being interviewed and are working trial shifts. A decision is due in the next week or so, we will of course let you know what happens next month.

OUR VALENTINES MENU IS ATTACHED.
This year we will run our valentines menu for a full week,
Saturday 12th to Friday 18th February.
This menu will replace the weekly changing
Chefs Creative Journey Menu.

Debbie's Column
Issue No 3
I really don't have much to say this time, I want this column to be more personal, to pass on my thoughts about what we do as I genuinely see it and also to keep you up to date without it being salesey. So:- I mentioned in my last column that many matters require attention. The front of the building is looking unloved and in need of repair. An establishment can be judged on first impression, and as it is looking tired, one might think we do not care. We definitely do care, but at present we do give out the wrong impression. As of Wednesday, work will commence on fixing this up, Alan and Rory will do some of the work, it will then be re-plastered by Mathew Horton, then Alan will repaint. Alan by the way is one of those much needed and appreciated behind the scenes full time employees, he has been our handyman and gardener for 8 years, and also worked at least 10 years for us at the Hanmer Arms. We apologise in advance if any inconvenience is caused, everyone will do their work as quick as possible, it is hoped a steady flow of repair and improvement will continue thereafter. |

A Note from Debbie
Hi All, I wanted you give you a progress report on how things
are going since our decision to step back a little...... I began and
soon realised, I was writing a novel. In Brief, Rory & I took
some necessary time out, and now the team appreciate the "darker"
side of the job, Rory and I can welcome and enjoy the company
of our guests more. .......For 30 years this job has been a way
of life for me, but as circumstances change, both business and
personal, so do your objectives. My passion for the job has been
tested and decisions had to be made. Now with a broader
distribution of responsibilities, I am once again having lots of fun.
The "Bar" has been raised (Not literally). The food coming from
the kitchen is better than it has ever been. We do what we do
and I am proud of it, and although occasionally we may get it
wrong, we fix it. One route we intend to follow is promoting
our "Dinner Menu‟ to clubs and associations e.g. Rotary,
Probus, Women‟s Guild. This in time will follow, but for now,
it‟s all Xmas, Xmas, Xmas. As a by the by, I felt our Sunday
Lunch had become boring, lacked enthusiasm, but now with
Home-made Yorkshires, Crispy Roast Potatoes, and our
Roasts Meats back out on display, there will be little out there to
compare. I got to go; Amanda wants to send this out. I felt I
had lost direction for a while, for that I am sorry, there's so much
more to say, so I might put in for a Monthly column.........

Previous Event Update
Our Barbeque and Family Fun Night was a great event.
Unfortunately though the event was not too well attended,
through clash of dates possibly. The Barbeque was
at full flame and there was a variety of salad and
side dishes, it all looked good and went down well.
It was so well organised, even for rainy weather,
that we will not be deterred and we will hold this event again.
New additional services
We are putting on our ‘Self Serve Hot Buffet’ on
Saturday lunchtimes 12noon till 2pm the same as
we do in the week Monday to Friday. Many of
our customers are familiar with our buffet and
know how popular it is, but to help us promote
this new time we have prepared a Promotional Offer.

WI-FI IS HERE
Our Wi-Fi network is now fully operational. Maybe
come and have a coffee, sandwich or a meal
while doing your work, checking your
E-mails or just surfing the net.

New Look
Our Sunday Lunch is changing....... Once again we will
be carving our meats in front of our customers
on the carving boards. We will still serve your
Sunday lunch to your table but you can see the
meats being carved throughout the prime time
lunch period. More to follow on this subject.
Bowling News:
The Bowling season is in full swing and according to
our customers, we have improved our green yet again.
Rory thinks this is due to him cutting back surrounding
trees, allowing the ‘wet patch’ to dry out quickly.
We hold private bowling green events throughout the
year, but as the British weather is not always kind,

As some of you may have had a newsletter from me not
so long ago, this is the newsletter for the month of July.
My Monthly Newsletters will be sent at the beginning
of every month from now on, to keep you up
to date and informed of any events and changes.
Previous Event Update
The Nags Head held their Steak Night on the 15th June 2010
and a great night was had by all. Lots of wonderful
feedback and comments were made on the night and
days following – For those of you that were unable
to make it, don’t worry, we will be making sure
steak nights are held again.

The Nags Head Self Serve Hot Buffet is so popular with
our customers; it is now available on a Saturday as well.

Brie and Cranberry Parcels are now permanently on our
standard A La Carte Menu. This vegetarian option
received very good feedback from Customers.
Our ‘Chef’s Creative Journey’ Menu changes every

Eventually this menu will be on the opening page of our

Previous Event Update Our Race Night and Quiz Night were
both a great success, we raised £520 pounds for Make a
Wish Foundation. We had plenty of fun and laughs on
Quiz Night, very competitive customers and prizes
to be won..... the fight was on, £40.00 Cash for
1st place, £20.00 Voucher for 2nd Place and Bottle
of Wine for the Losers, a great night had by all.

New additional services
Takeaway & Coffee to Go MENU – That’s right......
We now have a Takeout Menu for our customers.
Customers can order food from us and sit in the
comfort of their own home to enjoy it, How
wonderful is that? All the details of the Takeout
Menu can be found in the Pub and also
on our Facebook Page.
Regular Changes
We now have more of Geoff Beckett’s Pictures in the
reception area. Many People have commented on how
bright and colourful these pictures are and many of the
painting are selling fast, so if you are looking for a new
picture for your house, please come on down
and have a look.
New Ales for the World Cup
‘They think is ale over’ – Brewed in Stoke, a one off
brew from Titanic and ‘A Game of two Halves’ –
Brewed in Somerset, From Cottage Brewing Company.
H’or d’oeuvres
We offer H’or d’oeuvres every evening Monday –
Saturday for pre-booked tables in the restaurants.
H’or d’oeuvres not offered on Sundays.
New Look
Our New Menu covers & placemats have been a big
hit with the customers and we have received lots of
wonderful feedback. Fajitas are back, as requested by
many customers on the standard menu as of Friday 11th June.
Our weekly specials have been so popular we have now
increased the 3 starters & 3 mains to 4 of each,
now you get more choice. Weekly Specials
change every Wednesday Lunch. |
